HACCP Compliance Standards
How Termolog supports EU and Slovenian food safety regulations.
EU Regulation EC 852/2004
Termolog is designed to support the requirements of Regulation (EC) No 852/2004 on the hygiene of foodstuffs, which mandates HACCP-based food safety management systems for all food business operators.
Slovenia: ZVHv and ZIRS
In Slovenia, HACCP obligations are governed by the Administration for Food Safety, Veterinary Sector and Plant Protection (UVHVVR) and the Food Safety Act (ZVHv). Businesses must maintain temperature logs (List za beleženje temperature) for critical control points. The Inspectorate of the Republic of Slovenia for Health (ZIRS) regularly verifies compliance of these records.
Critical Control Points (CCPs)
Refrigeration and freezing are the most common critical control points in food businesses. Regulations require:
- Continuous temperature recording for refrigerators and freezers
- Immediate corrective action when limit values are breached
- Written documentation of every corrective action taken
- Record retention for a minimum of 2 years
How Termolog Helps
- Automated continuous temperature recording from wireless sensors
- Instant email alarm notification when critical limits are breached
- Corrective action documentation directly linked to each alarm event
- PDF export of the "List za beleženje temperature" report — signed, stamped, ready for inspectors
- Full audit trail of all changes to sensor thresholds and user permissions
- Data retained for the minimum 2-year period required by regulation
- Two-factor authentication and role-based access control
ISO 22000
Termolog supports the documentation requirements of ISO 22000 food safety management systems, including traceability, hazard analysis, and monitoring procedure protocols.
Note: Termolog is a compliance support tool. Final regulatory responsibility rests with the food business operator.
